There are two spellings: Jiménez and Giménez. For example, Susana Giménez is a very popular TV host in Argentinian television, and her family name starts with a G. Maybe the Mexican are more likely to spell it with a J.

Remember that "H" is always silent in Spanish. Often, it’s kept there for "historical" reasons. If there’s an aspirated "Jjjjja" sound, then you must be looking for a "J" that causes it, and on occasion a "G". NEVER an "H".
As an extra tidbit: "H" in many cases used to be "F" in Spanish.
Hence, you see things like:
Humo/Fumo (smoke/I smoke)
Hernando/Fernando (same name, different age)
Helado/Congelado (ice cream/frozen)
Lastly, to really blow your mind: many times, what is a "J" in Spanish, used to actually be written as an "X".
Ximena/Jimena
Quixote/Quijote
México/Méjico (rarely written the latter way)
The "X" was a softer, more Portuguese-sounding thing…like "shhhh". But that sound is long gone from Castilian.

I think sometimes it can be Giménez as well
