I have seen several recipes for "Spanish rice" or "Mexican rice" in here but I have yet to find the one I am looking for. The ones people seem to be leaving recipes for have veggies in them (Onion, carrots, tomato, peas). This is not the one I need!
The rice I always get is orange in color. It doesnt have any veggies in it that I remember. It is usually what I see at every Mexican place I eat. It is nothing but orange rice and it tastes great!!!

Again, it is just a orange colored rice. Not beans, veggies, nothing extra. Just orange rice. I hear tomato bullion may be the key? Any suggetions?
How do you make mexican rice like they make at the Authentic Mexican restaurants(like the ones in middle georgia - el cotija, el tapatio)? I don't think they use tomatoes, because it really does not taste like tomatoes. Do they use red chiles?
Is there a recipe available where it uses red chiles instead of tomatoes? For example, is there a recipe where instead of using tomato sauce, use red chile/enchilada sauce?

Theres got to be a difference. People call my Mexican rice 'Spanish rice' but its not right? Mexican rice: Fry white rice in oil till caramel color, add onion, garlic, chopped tomatoe or sauce & fry a minute then add broth.Cover and simmer for 15-20 min.
Then why is it on those ' instant spanish rice' packets the grains look like they haven't exploded?
Okay, I'm Mexican and this is pretty much how my family makes it. I'd like to hear from someone that is Spanish.I should have know that there would be so many variations.
