What is a simple and tasty Spanish or Latin American cookie?

I am looking for something quick, easy and yummy for all with common ingredients. Please NO nuts, because it is for school! THANKS!

  1. 1 c. butter
    1/2 c. confectionery sugar
    1 tsp. vanilla
    1/4 tsp. salt
    2 c. flour

    Cream butter, sugar, vanilla and salt until fluffy. Stir in 2 cups flour until well blended.

    Chill 30 minutes or until firm enough to handle. Shape into small, almost bite size cookies (round balls). Place on ungreased cookie sheet. Bake in preheated oven at 375 degrees. Bake until light golden brown, 9 to 10 minutes. While still warm roll in confectionery sugar once or twice.
